Pork Butt Redux

I’m running a picture of the pork butt (aka shoulder) because it’s reappearing at tonight’s dinner in a different form – unsure of what right now – possibly burritos. This picture is gorgeous but the meat, not so much. Coke does not enhance the recipe. Plus my mother’s voice always wrangles around in my memory any time people cook meat for a r-e-a-l-l-y long time. She would say, “Southerners love to cook their meat until all the nutritional value is depleted.” I’m not sure why she dictated overcooked meat to a regional problem, other than she was a YANKEE!

      It does look good. We had it for dinner again, and it’s just so mediocre. Even the Big Guy says so. Then, I spilled most of the penne sauce on the floor and tried to use queso fresco for it. Long story short – one of the worst dinners we’ve had in a long time. Tomorrow is another day.

  1. I agree with Steve. It looks delicious. Add some vinegar to yours tonight to counteract the sweetness — if it is overly sweet. Malt vinegar if you have it.
