I’m running a picture of the pork butt (aka shoulder) because it’s reappearing at tonight’s dinner in a different form – unsure of what right now – possibly burritos. This picture is gorgeous but the meat, not so much. Coke does not enhance the recipe. Plus my mother’s voice always wrangles around in my memory any time people cook meat for a r-e-a-l-l-y long time. She would say, “Southerners love to cook their meat until all the nutritional value is depleted.” I’m not sure why she dictated overcooked meat to a regional problem, other than she was a YANKEE!
